1 Gallon of Filtered Water

2 Cups Raw Sugar, or 1/2 Cup Honey and 1/2 Cup Sugar

1/2 Cup Black Tea Bags, or 2 Tsp. Black Tea Powder (Oolong, Green or White)

1 Kombucha SCOBY (Check out our SCOBY Sale for the best prices on Kombucha Cultures)

Optional: Fruit Juice & Flavoring Extracts

Kombucha is a fermented tea that is full of probiotics and enzymes. It’s usually made in a SCOBY (see below), but you can also purchase ready-made at health food stores or online. The SCOBY provides a home for the kombucha culture and looks like a brown pancake in the bottom of your brew.

Ingredients for Kombucha Recipe

1/2 gallon water, boiled and cooled to room temperature (100°F)

1 cup sugar (white or brown) OR 1 cup raw cane sugar or honey**

1/2 cup starter tea (black or green)**

1/2 cup unflavored kombucha tea from previous batch**

1 SCOBY**

Kombucha is a fermented tea that is high in probiotics and has many health benefits. It contains glucuronic acid, which is a detoxifier and antioxidant, as well as polyphenols, which are powerful antioxidants.

This recipe is made with kombucha starter liquid, but you can also use unflavored sparkling water or unflavored seltzer water instead of the starter liquid.

The higher the ratio of sugar to tea, the sweeter your kombucha will be. If you prefer your kombucha on the sweeter side, you can use 1/2 cup sugar in place of 1/4 cup sugar.

How to Make Kombucha

The following recipe is for a medium batch of Kombucha.

You can use any size jar or vessel you have on hand, but it’s important that your container has an opening large enough to fit your brewing system (i.e., your kefir milk and the cover you are using). If your vessel is too small, there won’t be enough room for the fermentation process to take place properly.

For this recipe, you will need:

  • 4 cups of purified water (bottled or filtered)
  • 1 cup of sugar (white or raw cane) or 1/4 cup organic white vinegar or apple cider vinegar if you’re making an alcohol-free batch
  • 1/2 cup starter tea from a previous batch (or store bought kombucha)
  • 2 cups kombucha from a previous batch (or store bought kombucha)

This is the recipe for kombucha that I use to brew my own. It’s not hard to make, but it is a bit time consuming. The good news is that it will keep for months (or years) in your refrigerator and you can drink as much as you want!
