How to convert a photo to black and white?

I have pictures of my family and friends and I always listen to comments about color. They are more concerned with how bright the pink is or how blue the sky is. There is no mention of the photo itself, but the color may be in it. I decided to change them up a bit and use black and white photography so I wouldn’t get lost in color or get lost in photography. These are the techniques I use in Photoshop, but I personally prefer simpler programming.
