Remove from heat and allow to cool slightly then pour off whey using a colander lined with cheesecloth. Drain for 15 minutes then transfer curds to cheesecloth lined mold pressing lightly with your hands to form into shape as it cools further (you may also tie the corners of the cheesecloth together and hang over sink to drain).
