This recipe is made with kombucha starter liquid, but you can also use unflavored sparkling water or unflavored seltzer water instead of the starter liquid. The higher the ratio of sugar to tea, the sweeter your kombucha will be. If you prefer your kombucha on the sweeter side, you can use 1/2 cup sugar in place of 1/4 cup sugar. How to Make Kombucha By Shelley Case The following recipe is for a medium batch of Kombucha. You can use any size jar or vessel you have on hand, but it’s important that your container has an opening large enough to fit your brewing system (i.e., your kefir milk and the cover you are using). If your vessel is too small, there won’t be enough room for the fermentation process to take place properly.
